lap cheong fan with groundnuts.

The lap cheong fan is cooked as usual, but some preperation has to be done.

Ingredients:
1/4 cup rice
3/4 cup water
1 lap cheong
1 mushroom
1/2 cup mixed vegetables
1/2 cup groundnuts
2 cloves garlic
oil
salt and pepper

Preparations:
Slice the lap cheong and mushroom into thin slices
Chop the garlic
Soak groundnuts for 2 to 3 hours, and boil until it is cooked
*groundnuts take a long time to cook
Drain the water after cooked.

Method:
1. Stir fry the lap cheong and mushroom with the garlic.
2. Pour rice, water, mixed vegetable, cooked groundnuts and the stir fried ingredients into a rice cooker.
3. Add salt and pepper to taste.
4. Cook until rice is soft and tender.

This is a variation of the lap cheong fan that i normally cook. i had loh mai fan a few weeks back and suddenly i felt like eating loh mai fan again. so this is the nearest i can get considering that i don't have any glutinous rice, mushrooms and chicken.
